Herb Sauce

Ingredients
- 1 shallot 
- 1 chile pepper 
- 3–4 garlic cloves 
- ½ cup red wine vinegar 
- ½ teaspoon salt 
- ½ cup cilantro 
- ¼ cup parsley 
- 2 Tablespoons oregano 
- ½ cup extra-virgin olive oil 
Directions
- Using a food processor or knife, finely chop herbs (remove leaves from woody stems like oregano, but use the stems of cilantro and parsley for more flavor). 
- Smash garlic, remove skin and finely chop/process. Remove skin from shallot and finely chop/process. 
- Finely chop/process chile pepper (make sure to wear gloves when chopping the pepper to remove the seeds safely). 
- Add red wine vinegar and salt to bowl/food processor. 
- While mixing, slowly pour in olive oil. 
- Serve over your favorite protein! We love it with eggs, meat or fish.
