Herb Sauce

Ingredients

  • 1 shallot

  • 1 chile pepper

  • 3–4 garlic cloves

  • ½ cup red wine vinegar

  • ½ teaspoon salt

  • ½ cup cilantro

  • ¼ cup parsley

  • 2 Tablespoons oregano

  • ½ cup extra-virgin olive oil

Directions

  1. Using a food processor or knife, finely chop herbs (remove leaves from woody stems like oregano, but use the stems of cilantro and parsley for more flavor).

  2. Smash garlic, remove skin and finely chop/process. Remove skin from shallot and finely chop/process.

  3. Finely chop/process chile pepper (make sure to wear gloves when chopping the pepper to remove the seeds safely).

  4. Add red wine vinegar and salt to bowl/food processor.

  5. While mixing, slowly pour in olive oil.

  6. Serve over your favorite protein! We love it with eggs, meat or fish.
