Bok Choy Steaks

Ingredients:

  • 2-4 heads bok choy or pak choi (a type of Asian vegetable similar to cabbage)

  • ¼ cup sweet chili sauce

  • 1 Tablespoon rice vinegar

  • 1 Tablespoon brown sugar

  • 1 Tablespoon sesame oil

  • 1 Tablespoon soy sauce

  • 1 Tablespoon high-heat oil like avocado, sunflower, safflower (if pan searing)

Directions:

Prepare one of two ways: on the grill or pan seared on the stove.

Grilled:

  1. Preheat a grill to medium. Cut bok choy/pak choi in half lengthwise and rinse well (dirt often gets trapped in the stem).

  2. In a small bowl, whisk sweet chili sauce, rice vinegar, brown sugar, sesame oil and soy sauce. Toss bok choy/pak choi in sauce.

  3. Grill until charred, 1 to 2 minutes per side, brushing with any extra sauce.

For Pan Seared:

  1. Heat oil in cast-iron skillet or pan.

  2. Sear until charred, 3-5 minutes.

  3. Serve over rice or noodles!
